
Weeknight indulgence! We’re trying not to make a habit of drinking during the week, but this meal called for it. Belle Vignes Sauvignon Blanc = new affordable favorite, can’t believe the price!

I didn’t photograph the prep because honestly… spatchcocking a chicken feels very American Psycho. But trust me, it’s worth it: I spatchcock, dry brine for 48 hours, and push garlic-herbed compound butter under and over the skin.
